Sambal is called Indonesian as "chilipaste". There are a large number of different sambals, e.g. Sambal Asam, Sambal Belado or Sambal Manis, to name but a few. In our latitudes most famous in the Sambal Oelek, also called Sambal Ulek. It is a sharp Sambal, which consists of raw, crushed chillies as well as salt and vinegar. "Ulek" means, in Indonesian, a kind of mortar, which is used to crush these ingredients in the mortar.
Sambal Oelek is traditionally served in Indonesia as a spice garnish in small dishes: with vegetables, fish, chicken and rice dishes. In the rest of Asia, especially in Malaysia, Sambal Oelek is now well-known and very popular.
